Food and agricultural testing establishes whether a product meets the standards that apply to it — the Food Safety and Standards regulations for domestic sale, and the importing country’s requirements for export.
The testing has to be done by a laboratory recognised for the purpose. FSSAI notifies laboratories for regulatory testing, and NABL accredits them more broadly. A report from an unrecognised laboratory is generally not accepted regardless of how competent the analysis was.

What gets tested
- Nutritional analysis, for the label declaration required on packaged food
- Microbiological parameters — total plate count, coliforms, salmonella, listeria and yeast and mould
- Heavy metals — lead, arsenic, cadmium and mercury
- Pesticide residues, which govern most horticultural exports
- Mycotoxins, particularly aflatoxin in nuts, spices and cereals
- Food additives and preservatives, against permitted limits
- Adulterants specific to the commodity
- Shelf life and stability studies, to support the date marking
Label declarations must be supported
The nutritional information printed on packaged food must be supported by actual analysis of the product as sold. A value taken from a generic composition table for a similar product is not compliance.
The same applies to claims. Describing a product as high in protein, low in fat or a source of a nutrient triggers specific conditions under the labelling regulations, and the claim must be substantiated by testing.
Export testing is driven by the destination
Pesticide residue limits differ substantially between markets. A consignment fully compliant with Indian limits can be rejected in the European Union, where maximum residue levels are set independently and are often lower.
Establishing the destination’s limits before the growing season, rather than before the shipment, is what prevents rejection. By the time the produce is harvested the residue position is already fixed.
Sampling determines the result
- Samples must be representative of the batch, not selected from it
- Microbiological samples require sterile collection and cold transport within a short window
- Sample quantity must meet the laboratory’s minimum for the parameters requested
- Chain of custody must be documented for a report to be defensible
- For a regulatory sample, the prescribed sampling procedure must be followed exactly

Frequently asked questions
Does the laboratory need to be recognised?

Can I use a generic nutrition table for my label?
No. The declaration must be supported by analysis of your product as actually sold. Nutrition claims such as high in protein carry additional conditions and must be substantiated.
My product passes Indian limits. Can I export it?
Not necessarily. Pesticide residue limits differ by market and are often lower in the European Union. The destination’s limits should be established before the season, not before the shipment.
How often should I test?
As your FSSAI licence conditions specify, and whenever the formulation, supplier or process changes. Export consignments are generally tested batch by batch.
What if a sample fails?
The report identifies the parameter and the extent. Depending on the failure the remedy may be process correction, a supplier change or reformulation, and we explain what the result indicates.
What is not included. Government fees, statutory charges, stamp duty, court and registry fees, digital signature costs and any third-party professional charges are separate and payable at actuals.
